This is a wild one with a terrible name, the Stinking Toe aka Tinkin’ Toe! The seed pod is the fruit of the West Indian Locust, one of the largest trees in the Caribbean. Inside the shell is a cream-coloured, powdery flesh. It reminds me of spores and has a light fluffy texture with a sweet flavour. You can use it in Jamaican punch and tons of other dishes!
